These cookie butter Chocolate chip cookies are seriously on another level! These crispy, chewy delights combined with chocolate and sprinkled with sea salt have so much flavor and are so addicting, I feel sorry for not making them sooner!

This cookie butter Chocolate chip cookie recipe inspired by a peanut butter chocolate cookie I had in San Diego a few months back. My husband and I stopped at an ice cream sandwich shop for dessert after dinner and I noticed they had a sea salt peanut butter chocolate chip.

Wait what?

I don’t need to look anymore. And with the vanilla bean ice? I don’t even want to get started on that! Just pure Delicious. Period. I will dream about it until my next trip thank you.

But I love that cookie from that ice cream shop so much, I decided to make a version of my own. I wanted to take a different approach and use cookie butter. This way, those who have a nut-allergy can enjoy them as well.

Cookie butter has the same consistency as peanut butter but made from the traditional Belgian cookie, speculoos. The cookie is blended until it becomes a thick, creamy consistency. Compared to peanut butter, cookie butter has a sweeter flavor and has more spices. Almost like a light gingerbread cookie.

I also love the texture it gives to these cookie cutter Chocolate chip cookies loaded with chocolate and sprinkled with sea salt are your next dessert to try. I like making chewy, soft cookies but these come out crunchy with a chewy center. And they are so addicting!

And the sea salt becomes a key ingredient in this recipe. It may sound weird but just that tiny bit of sea salt sprinkles on top really brings out the cookie flavor.

These cookie Butter Chocolate chip cookies go great with a hot beverage, whether that is hot chocolate, coffee, or tea.

Cookie Butter Chocolate Chip Cookies

Ingredients
  

  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 2 sticks butter, softened
  • ¾ cup sugar
  • ¾ cup brown sugar, packed
  • 1 cup cookie butter
  • 2 eggs
  • 1 tsp. vanilla
  • 1 12oz. bag mini chocolate chips
  • 1 tsp. sea salt flakes or crushed sea salt crystals

Instructions
 

  • Preheat oven to 350* Cover a baking sheet with parchment paper.
  • In a bowl, combine the flour, baking soda, and cornstarch. Set aside.
  • In a mixing bowl, cream the butter, sugar, and brown sugar until light and fluffy, about 4-5 minutes, scraping the bowl down halfway.
  • Mix in the cookie butter, eggs, and vanilla. Mix until smooth.
  • Slowly add in the flour and continue to mix until well combined.
  • Fold in the chocolate chips.
  • Cover and refrigerate for at least an hour or overnight.
  • Remove from the fridge and let rest for 5-10 minutes to slightly soften.
  • Scoop the dough by the tablespoon and shape into balls. Place 2-3 inches apart onto the baking sheet.
  • Sprinkle a small amount of sea salt flakes on to the top of the cookies.
  • Bake for 10-12 minutes. The edges of the cookies will be crispy and the center will still be gooey.
  • Remove from the oven and let cool on baking sheet for another 5 minutes before transferring to serving tray.

    I love your descriptions about these cookies. I could almost smell chocolate chip cookies baking in my own home. Yum. I wish I had a Trader Joe’s closer to my house. I have heard their Cookie Butter is amazing. Are there any other brands that I should try and where do I buy it?

      Thank you! Trader Joe’s has great cookie butter but there are certainly other stores that carry their own brand as well. If you live near a Sprouts, Ralphs, Walmart, or Target, they will either have their own brand or Lotus Biscoff creamy cookie butter.

  8. I have never heard of cookie butter before. I live in Denmark, and it is hard to even find peanut butter here. Do you know what the ingredients are in the cookie butter you use?

      Oh no! I purchase cookie butter from my local Trader Joe’s that is made from speculoos cookies. It has a slight gingerbread taste.
