Key Lime Pie Bites

These easy key limes pie bites are the perfect sweet and zesty desserts! Full of tarty lime flavor and made with a coconut crust, it’s like being on a mini vacation.

I am not a key lime pie fan but I love these little guys! I usually can’t handle the tartness from the limes in key lime pies but my husband is obsessed with key lime pie! If we go out and can make it to the dessert menu, he will order that if it’s an option.

The first time I made these, they weren’t even close to what I was liking, the crust to crumbly and too much cream cheese in the filling.

The second time came out sooo much better! I’m pretty sure I ate 2 in one sitting but no need to bring up the past. The filling is zesty but not in your face sour and super creamy. And the crust! My favorite part of it all! The crust is like a soft cookie! It’s moist and chewy and I can’t get enough of it!

Now I have a key lime pie recipe for both myself and my husband to enjoy!

Ingredients
  

  • 1 cup coconut flour
  • 4 Tbl. butter, melted
  • 1 tsp. cinnamon
  • 1 8 oz. cream cheese, softened
  • ¼ cup sweetened condensed milk
  • ½ cup lime juice, about 6 limes
  • 1 Tbl. Lime zest, plus more for garnish
  • 1 cup powdered sugar

Instructions
 

  • Preheat oven to 350℉ grease or line a muffin pan.
  • In a medium bowl, combine the coconut flour, butter, and cinnamon. It should be humble but hold its shape with pressed together.
  • Drop a tablespoon into each muffin tin and press down to form an even layer crust. Bake in the oven for 10 minutes. Remove and let cool for a few minutes.
  • In a mixing bowl, blend the cream cheese, condensed milk, lime juice, lime zest, and powdered sugar.
  • Pour the mixture into each muffin tin about 3/4 of the way. Repeat until all of the mixture is used.
  • Bake in the oven for 6-8 more minute. Remove and let completely cool for about 10-15 minutes, not removing from the pan.
  • Refrigerate for at least an hour to chill.
