Do you love a classic carrot cake as much as I do? Then you have to try this homemade recipe this upcoming Spring. It’s easy to make and the family will love it!

I love a classic carrot cake. The spice, and most of all, the creamy frosting. It’s become a family staple in my household. Mainly because I grew up with my Grandmother making carrot cake every year for Easter. It’s a dessert my family and I always look forward to. And after multiple attempts throughout the years, I created a my own version on this traditional dessert.

What I enjoy most of all about a classic carrot cake is the simplicity of it, along with all the sweet flavors incorporated into the batter and frosting. Sometimes shredding the carrots can be tedious, but it provides such a freshness to the texture that makes it worth your while. If you don’t have the time or energy, you can always buy store bought shredded carrots, though they may be slightly hard and dry.

You can also get really creative with the ingredients to give this classic carrot cake more texture as well. I enjoy adding walnuts to the batter and my sister loves shredded coconut. You could also try chopped pineapple, raisins, or chocolate chips with carrot cake

Classic Carrot Cake

Ingredients
  

Cake

  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup oil
  • 1 cup applesauce
  • 2 cups sugar
  • 4 eggs
  • 6 large carrots, grated (about 3 cups total)

Frosting

  • 4-5 cups powdered sugar
  • 1/2 cup butter, softened
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 tsp. vanilla
  • 1 cup walnuts, plus more for garnish (optional)

Instructions
 

Cake

  • Preheat oven to 350°F. Butter two 9-inch cake pans.
  • In a medium bowl, sift the flour, baking soda, cinnamon, and salt. Set aside.
  • In another large mixing bowl, mix together the oil, applesauce, sugar, and eggs until well combined.
  • Slowly add in the flour mixture and continue to mix until well blended.
  • Fold in the shredded carrots.
  • Pour the cake batter evenly into the cake pans and bake 35 minutes or until the the center comes out clean when inserting a toothpick. Remove from the oven and let cool for 10 minutes before turning out.

Frosting

  • Mix together the powdered sugar, butter, cream cheese, and vanilla in mixing bowl until fluffy, about 5-7 minutes. Layer the cakes with the frosting and garnish with your choice of toppings.
