Preheat oven to 350* Cover a baking sheet with parchment paper.
In a bowl, combine the flour, baking soda, and cornstarch. Set aside.
In a mixing bowl, cream the butter, sugar, and brown sugar until light and fluffy, about 4-5 minutes, scraping the bowl down halfway.
Mix in the cookie butter, eggs, and vanilla. Mix until smooth.
Slowly add in the flour and continue to mix until well combined.
Fold in the chocolate chips.
Cover and refrigerate for at least an hour or overnight.
Remove from the fridge and let rest for 5-10 minutes to slightly soften.
Scoop the dough by the tablespoon and shape into balls. Place 2-3 inches apart onto the baking sheet.
Sprinkle a small amount of sea salt flakes on to the top of the cookies.
Bake for 10-12 minutes. The edges of the cookies will be crispy and the center will still be gooey.
Remove from the oven and let cool on baking sheet for another 5 minutes before transferring to serving tray.
