Peach Cobbler Crumb Muffins

These amazing Peach Cobbler Crumbs Muffins are the next step from the traditional peach cobbler and taste just as delicious! The only thing left is to drop a scoop of ice cream on top!

I love peach cobbler! My sister and I grew up on peach cobbler. It’s a childhood staple in our household we hold very dearly. My grandmother made it all the time growing up until we were old enough to make it for each other.

Peach Cobbler Crumb Muffins

My husband didn’t try peach cobbler until he met me and now he’s hooked on it too. It’s so easy to make and tastes so delicious that you can’t just have one scoop of it. You want to fight over with your siblings with who gets the last bite but then end up sharing. We still like to enjoy peach cobbler together but it’s an occasional dessert because we see it as a childhood delicacy.

I’m not sure why I thought of making these Peach Cobbler Crumb Muffins. Maybe I wanted to try making muffins since I haven’t really heard of peach cobbler muffins? Maybe I just wanted to try something different for my personal taste pallet. Or Maybe I just don’t want to share the last bite for once. Either way, this recipe is something else! When I told my sisters about the recipe before making them, they instantly wanted to try one.

Peach Cobbler Crumb Muffins

When I tried one, I became obsessed with the softness of the muffin. It’s different than eating peach cobbler but it still tastes delicious. I love the softness you get from the muffin and the crunchiness from the crumb topping. And then you get a bite of the sweetness from the peaches and it reminds me of my childhood.

Peach Cobbler Crumb Muffins

Course breads
Servings 1 dozen

Ingredients
  

  • 1 stick butter, melted
  • ½ cup sugar
  • ½ cup flour
  • ½ cup brown sugar
  • ½ cup quick oats
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 (15 oz.) canned sliced peaches, cut into quarters and reserving 1 Tbl. of the juice
  • 3 Tbl. Butter, melted
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 2 eggs, beaten
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • ½ cup milk
  • 1 Tbl. peach juice
  • 1 cup powdered sugar
  • ½ tsp. lemon extract or lemon juice

Instructions
 

  • Preheat oven to 350* Grease of line a muffin pan.
  • For the crumb coating: Combine all of the ingredients together until well combined and crumbly. Set aside.
  • For the muffins: In a mixing bowl, combine the flour, baking soda, and baking powder. Set aside.
  • In another mixing bowl, mix the quartered peaches with the butter, eggs, sugars, cinnamon, vanilla, and milk.
  • Add in the flour mixture and mix well to combine.
  • Fill the muffin tins evenly halfway and spread 1 tablespoon of crumb topping on top of each.
  • Bake for 15-20 minutes or until cooked through in the center.
  • For the glaze: Mix the reserved peach juice with the milk, powder sugar, and lemon extract. Continue to mix until a smooth consistency. If thick, add another tablespoon of milk.
