These easy to make low carb pumpkin waffles are not only low carb, but also gluten-free! They are great to make during the holidays and are delicious!

My Dad use to make waffles all the time on the weekends as I grew up and he would go all out! The fresh strawberries. The whipped cream. The vanilla ice cream. Chocolate syrup. And of course maple Syrup. It was like every kids dream breakfast.

I still enjoy a fresh waffle with fresh strawberries and whipped cream. And now that it’s fall, I’m fixated on pumpkin season.

These Low Carb Pumpkin Waffles are delicious and are easy to make! Even though low carb and all bread have a difference in texture, the flavor is still there and tastes amazing!

Ingredients
  

  • 1 stick butter, melted, plus more for cooking
  • 1/2 cup almond flour
  • 3 tsp. baking powder
  • 1/2 cup pumpkin pure
  • 1/2 tsp. vanilla extract
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 2 tsp. cinnamon
  • 7 eggs
  • 2 Tbl. Heavy cream
  • 1/3 cup dark chocolate chips

Instructions
 

  • In a large mixing bowl, combine the melted butter, almond flour, baking powder, pumpkin puree, vanilla extract, nutmeg, allspice, and cinnamon.
  • Add in the eggs and heavy cream. Whisk until well combined and becomes a thick batter.
  • Carefully stir in the chocolate chips.
  • Cook waffle according to the manufacturer’s instructions until golden brown.
  • Serve with butter and syrup.

    Oh my goodness these look amazing! Are they diabetic friendly? My mother-in-law is diabetic so I always try to help her out and find new recipes for her to try!

      Thank you! I totally understand. My grandmother had diabetes and I was always looking out for new recipes for her to try. This is a low carb recipe with low sugar. This could be a great recipe for her to look over and try out if she is needing a new breakfast idea!
