Balsamic Chicken Meatballs

Do you have a pasta dish you want to serve but need a protein with it? Then don’t worry, these balsamic chicken meatballs are your answer.

My husband and I are currently OBSESSED with these chicken meatballs with a kiss of balsamic vinegar. Every time I make them, we are already popping 1 or 3 into our mouths before serving them. They are so tender and packed with flavors, they can honestly be served as an appetizer for an event. They are that good.

A simple pasta dish will go great with these balsamic chicken meatballs, such as my one pot lemon pasta, or any herb pasta. They can also be served with mashed potatoes, for meatball sandwiches, or even as part of your next spaghetti night! There are so many options, and best part, you can freeze them ahead of time to make weeknight dinners a breeze.

Balsamic Herb Chicken Meatballs

Ingredients
  

  • 1 lb. ground chicken (or ground turkey)
  • 1 egg
  • 1/2 cup Italian breadcrumbs
  • 1/2 cup Grated parmesan cheese, plus more for garnish
  • 2 Tbl. Olive oil
  • 1/2 tsp. Garlic powder
  • 1/2 tsp. Onion powder
  • 1/2 tsp. Lemon pepper
  • 1 Tbl. Balsamic vinegar, plus more to serve
  • Salt + pepper to taste

Instructions
 

  • In a large mixing bowl, combine the ground meat, egg, breadcrumbs, parmesan cheese, olive oil, garlic powder, onion powder, lemon pepper, and balsamic vinegar. Lightly season with salt and pepper.
  • Cover and let rest for at least 30 minutes on the counter or overnight in the fridge.
  • In a medium skillet, heat the olive oil over medium-heat.
  • By the spoonful, form the meat mixture into meatballs the size of 2-3 tablespoons worth.
  • Place the meatballs in the pan an inch apart and cook on each side foor 2-3 minutes, or until lightly browned and cooked through. You may have to work in batches.
  • Remove from heat and let cool for 5-10 minutes. Garnish with a sprinkle of parmesan and a drizzle of balsamic vinegar.
  • Serve with you favorite pasta dish, meat sauce, sub sandwich, polenta, or as a finger food for your next party event!

Notes

To Freeze: After cooking and letting cool, flash freeze the meatballs on a tray for 20 minutes before storing in a freezer bag. They can be stored in the freezer for up to 6 months
