1/2cupGrated parmesan cheese, plus more for garnish
2Tbl. Olive oil
1/2tsp.Garlic powder
1/2tsp.Onion powder
1/2tsp.Lemon pepper
1Tbl. Balsamic vinegar, plus more to serve
Salt + pepper to taste
Instructions
In a large mixing bowl, combine the ground meat, egg, breadcrumbs, parmesan cheese, olive oil, garlic powder, onion powder, lemon pepper, and balsamic vinegar. Lightly season with salt and pepper.
Cover and let rest for at least 30 minutes on the counter or overnight in the fridge.
In a medium skillet, heat the olive oil over medium-heat.
By the spoonful, form the meat mixture into meatballs the size of 2-3 tablespoons worth.
Place the meatballs in the pan an inch apart and cook on each side foor 2-3 minutes, or until lightly browned and cooked through. You may have to work in batches.
Remove from heat and let cool for 5-10 minutes. Garnish with a sprinkle of parmesan and a drizzle of balsamic vinegar.
Serve with you favorite pasta dish, meat sauce, sub sandwich, polenta, or as a finger food for your next party event!
Notes
To Freeze: After cooking and letting cool, flash freeze the meatballs on a tray for 20 minutes before storing in a freezer bag. They can be stored in the freezer for up to 6 months
