Classic Carrot Cake

Ingredients

Cake

  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup oil
  • 1 cup applesauce
  • 2 cups sugar
  • 4 eggs
  • 6 large carrots, grated (about 3 cups total)

Frosting

  • 4-5 cups powdered sugar
  • 1/2 cup butter, softened
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 tsp. vanilla
  • 1 cup walnuts, plus more for garnish (optional)

Instructions

Cake

  • Preheat oven to 350°F. Butter two 9-inch cake pans.
  • In a medium bowl, sift the flour, baking soda, cinnamon, and salt. Set aside.
  • In another large mixing bowl, mix together the oil, applesauce, sugar, and eggs until well combined.
  • Slowly add in the flour mixture and continue to mix until well blended.
  • Fold in the shredded carrots.
  • Pour the cake batter evenly into the cake pans and bake 35 minutes or until the the center comes out clean when inserting a toothpick. Remove from the oven and let cool for 10 minutes before turning out.

Frosting

  • Mix together the powdered sugar, butter, cream cheese, and vanilla in mixing bowl until fluffy, about 5-7 minutes. Layer the cakes with the frosting and garnish with your choice of toppings.
