When the warm weather hits for the season, a light and refreshing dish will almost always become a craving. That’s why making a simple salad that doesn’t require a ton of cooking can be an appealing option. So making tortellini pasta salad with veggies and a sprinkle of cheese would be downright delicious.

What’s even better than a pasta salad that uses common household ingredients? One that is vegetarian, making this side dish a great option for the next pot luck.

In my opinion, tortellini pasta salads are underestimated. They are incredibly easy to create, inexpensive to make, and taste crazy good. The tortellini can also be substituted for any type of filling of your choice.

Tortellini Salad

Tortellini Pasta Salad

Ingredients
  

  • 1 8-10 oz. packaged cheese tortellini pasta
  • ¼ cup olive oil
  • ½ lemon, juiced
  • 3 Tbl. marinated artichokes, finely chopped
  • ¼ cup yellow bell pepper, finely chopped
  • 1 shallot, finely diced
  • ½ tsp. dried oregano
  • 1 Tbl. dried basil (or fresh)
  • 1-2 Tbl. grated parmesan

Instructions
 

  • Cook the pasta according to the package. Drain and transfer to a bowl.
  • Add in the olive oil and and lemon juice. Carefully toss until each tortellini is evenly coated. Allow to cool for 5 minutes.
  • Add in the artichokes, yellow bell pepper, oregano, basil, and parmesan cheese. Lightly season with salt and pepper.
  • Carefully mix again, making sure all the ingredients are well combined.
  • Cover the bowl with foil or saran wrap annd refrigerate for at least 30 minutes or 1 hour.
