This slow cooker Chile Verde is a meal that is in constant rotation in my household. It’s crazy easy to make and taste amazing with fresh avocado and warmed rice. It’s a simple dinner idea, but one that has become a family favorite. There are no extra steps or a dozen ingredients to work with, which can be a relief after a long, tiring day. This slow cooker meal is straight to the point and won’t require any additional steps once the beeper sounds off. This comfort dish is one I make regularly, probably at least once a month, and one that won’t be removed from the menu anytime soon.

Absolutely. Making this Chile Verde is just as easy to make in the instant pot as it is in the slow cooker. Simply follow the instructions below and seal with the pressure cooker lid. Set the pressure cooker for 30 minutes on high with a 10 minute quick release. And viola, dinner is served in a heartbeat.

For this slow cooker Chile Verde, it calls for a pork loin or chops. Either will do for this recipe because the results will be the same, with a tender bite. Pork loin and chops sadly get a bad rap, mainly due to how easily they can be overcooked and can give a tough, fibrous texture. No one wants that, but I want to encourage to not underestimate the protein. If given a little extra attention and love, you will be happy with the outcome. This is also a leaner, healthier option, which is a bonus. I have tried both types of pork, including pork tenderloin, and I don’t have a preference. All of them come out delicious.
