Lemon Bars

These delicious Lemon bars with a pine nut crust are so sweet and tarty, they make the perfect dessert for any special occasion! They can be prepared light and creamy or firm and tarty. There are so many ways to making them now and still come out just as good.

My husband’s cousin makes her own amazing lemon bars during the Holidays and I have to force myself to not eat the entire batch. They are so creamy and soft, it makes the perfect bait.

Which is why I decided to create my own. A golden pot of guilty pleasure to share!

When my husband and I went up to San Francisco a few months ago, we went to a popular bakery. I noticed they had lemon bars and I couldn’t resist grabbing one.

It looked like an ordinary lemon tart. Turns out, there were bits of pine nut in the crust for texture. I loved the slightly nutty flavor and didn’t overpower the treat at all. It was so delicious I wanted to try recreating it! And I am happy with the result!

I really enjoy lemon bars that are light and fluffy with a soft crust. I also like lemon bars with a lot of crust. If you prefer a thinner layer of crust, just add in the amount crust mixture to your desire. If you are also needing a recipe with any leftover crust mixture, it would be perfect to use for my Key lime pie bites.

Lemon Bars

Course Dessert
Servings 1 dozen

Ingredients
  

  • 2 cups flour
  • ¼ cup pine nuts, crushed
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 stick butter, melted
  • 3 eggs
  • 2 cups sugar
  • ½ cup flour
  • ½ cup lemon juice, about 8 lemons
  • 1 Tbl. lemon zest, optional
  • ½ cup powdered sugar, to garnish

Instructions
 

  • Oven 350℉ and lightly grease a baking dish with oil.
  • In a large mixing bowl, combine the flour, pine nuts, brown sugar, sugar, and melted butter together. It should become crumble but hold together with pressed.
  • Pour the mixture into the baking dish and press down to form an even layer crust.
  • Bake for 10-12 minutes. Remove and let cool.
  • In another mixing large bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until smooth.
  • Pour the mixture on top of the crust. Bake for another 20-25 minutes. Remove from the oven and let cool for about 30 minutes.
  • Dust the powdered sugar on top and cut into 12 squares.

    What size pan did you use?

      Hi Jenny,

      I use a 6-inch pan but any pan will work fine! A bigger or smaller pan will have different cooking times though.
