Crispy Potato Pancakes

If you love potatoes and even more fried, then these crispy potato pancakes are calling you! They are crispy on the outside but when bitten into, smooth and creamy on the inside. These are so easy to put together and are great to make for a quick side dish.

I love potato pancakes. I love potato anything. Potato salad. Mash Potatoes. Baked potatoes. Anything potatoes. So I always get super excited when I have leftover potatoes because I know exactly what to make with them.

My grandmother taught me how to make crispy potato pancakes when I was younger. I don’t usually put cheese and green onions into potato pancakes but if I have the ingredients, I like to add them in.

Crispy Potato Pancakes

These crispy potato pancakes are so simple to make yet taste so delicious! Like eating a pocket size baked potato or an adult version tator tot.

Crispy Potato Pancakes

Total Time 30 minutes

Ingredients
  

  • 2 cups leftover potatoes, mashed
  • 1 Tbl. onion powder
  • 2 garlic cloves, minced
  • 1 cup white cheddar cheese, shredded
  • 2 green onions, chopped
  • 1 cup flour
  • 1 egg, beaten
  • oil, for frying
  • salt + pepper to taste

Instructions
 

  • In a large mixing bowl, combine all of the ingredients together until it becomes a soft dough.
  • In a skillet or medium pan over medium-low heat, add 2 tablespoons of butter or oil.
  • Once hot, scoop the potatoes mixture by the tablespoon and flatten into the pan, forming a pancake.
  • Cook in batches and until golden brown, about 3-5 minutes per side. Drain on a paper towel and let cool.
  • Serve with sour cream, apple sauce, or horseradish.

  4. I haven’t had potato pancakes in years, my Nan used to make them on Sundays. Love the color on these and the fact that you add white cheddar, they look divine! Thanks so much for sharing 🙂

      Thank you so much! I am a big cheese fan and there is never enough for me in a recipe haha. My Grandmother used to make potato pancakes for our family ALL THE TIME and they were so delicious! She loved using making them with leftover mash potatoes and now I do the same.
