In a large mixing bowl, combine all of the ingredients together until it becomes a soft dough.
In a skillet or medium pan over medium-low heat, add 2 tablespoons of butter or oil.
Once hot, scoop the potatoes mixture by the tablespoon and flatten into the pan, forming a pancake.
Cook in batches and until golden brown, about 3-5 minutes per side. Drain on a paper towel and let cool.
Serve with sour cream, apple sauce, or horseradish.
