Blueberry Chunk Cookies

Do you ever get a craving for something bitter sweet with a crunch? Then you have to try these amazing Blueberry Chunk cookies!

Don’t get me wrong, I am a big lover of a cookie that is soft and chewy but there are days I just need a bit of OOMPH to satisfy my pallet at the end of the day.

Some of my family members prefer a crunch in a cookie as well and had them in mind for these. I love the combination of blueberries and dark chocolate.  

Blueberry Chunk Cookies

Total Time 30 minutes
Course Dessert

Ingredients
  

  • 1 cup flour, sifted
  • 1 cup oatmeal
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 1 cup fresh blueberries
  • 1 cup nestle dark chocolate chips
  • 1/2 cup chopped walnuts (optional)

Instructions
 

  • Preheat the oven to 350℉ Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the flour, oatmeal, baking soda, cornstarch, salt, and cinnamon. Set aside.
  • In a mixer or by hand, cream the butter and sugar for about 3-5 minutes or until creamy. Then mix in the beaten egg and vanilla extract until well combined.
  • Slowly add in the flour until a dough forms.
  • Fold in the blueberries and chocolate chips.
  • Drop the dough onto the baking sheet by the spoonful an inch apart from each other. Bake in the oven for 12 minutes.
  • Remove from the oven and let the cookies sit on the baking sheet for another 5 minutes. Serve once cooled.
  • Store in the refrigerator in a sealed container for 3-5 days.
