One Pot Pesto Shrimp Pasta

Ingredients

  • 1 lb. shrimp, peeled, deveined, and chopped into quarters
  • 3 cloves garlic, minced
  • 1 Tbl. Olive oil
  • 8 oz. orechiette pasta
  • ¼ cup pesto (I also have a homemade recipe above)
  • ½ cup heavy cream
  • 2 Tbl. parmesan cheese
  • Salt + pepper to taste

Instructions

  • In a large skillet, heat the tablespoon of oil with the minced garlic over medium heat. Continue stirring around to prevent burning. Cook for about a minute until garlic gets a light golden, about 1-2 minutes.
  • Add in the pasta and 2 cups of water. Cover and cook for 10 minutes or until pasta is al dente.
  • Uncover and reduce heat to low.
  • Add in the shrimp, pesto, heavy cream, and parmesan cheese. Lightly season with salt + pepper. Cook until the shrimp is pink, about 5-6 minutes.
  • Serve.
