1lb.shrimp, peeled, deveined, and chopped into quarters
3clovesgarlic, minced
1Tbl. Olive oil
8oz.orechiette pasta
¼cuppesto (I also have a homemade recipe above)
½cupheavy cream
2Tbl. parmesan cheese
Salt + pepper to taste
Instructions
In a large skillet, heat the tablespoon of oil with the minced garlic over medium heat. Continue stirring around to prevent burning. Cook for about a minute until garlic gets a light golden, about 1-2 minutes.
Add in the pasta and 2 cups of water. Cover and cook for 10 minutes or until pasta is al dente.
Uncover and reduce heat to low.
Add in the shrimp, pesto, heavy cream, and parmesan cheese. Lightly season with salt + pepper. Cook until the shrimp is pink, about 5-6 minutes.
