Lemon Bars

Ingredients

  • 2 cups flour
  • ¼ cup pine nuts, crushed
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 stick butter, melted
  • 3 eggs
  • 2 cups sugar
  • ½ cup flour
  • ½ cup lemon juice, about 8 lemons
  • 1 Tbl. lemon zest, optional
  • ½ cup powdered sugar, to garnish

Instructions

  • Oven 350℉ and lightly grease a baking dish with oil.
  • In a large mixing bowl, combine the flour, pine nuts, brown sugar, sugar, and melted butter together. It should become crumble but hold together with pressed.
  • Pour the mixture into the baking dish and press down to form an even layer crust.
  • Bake for 10-12 minutes. Remove and let cool.
  • In another mixing large bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until smooth.
  • Pour the mixture on top of the crust. Bake for another 20-25 minutes. Remove from the oven and let cool for about 30 minutes.
  • Dust the powdered sugar on top and cut into 12 squares.
