16oz.Mixed Heirloom or bunched carrots, peeled and stems trimmed to about 2 inches (Baby carrots can also be used)
2-3Tbl.Olive oil
1tsp.honey
¼tsp.white pepper
½tsp.smoked sea salt
1tsp.smoked paprika
½tsp.garlic powder
1Tbl.brown sugar
½tsp.ground ginger (optional)
Instructions
Preheat the oven to 425℉. Line a baking sheet with foil.
Arrange the carrots on the baking sheet in an even layer. Drizzle the olive oil and honey over them.
Sprinkle the white pepper, smoked sea salt, smoked paprika, garlic powder, brown sugar, and ground ginger (if using). Toss together until the carrots are evenly coated.
Bake 21-25 minutes, shaking the pan halfway through, until the carrots are caramelized and tender. If the carrots aren't easily pierced with a fork, roast for an additional 5 minutes.
