Homemade Kale Pesto

Makes about 1 cup

Ingredients

  • 1 cup baby arugula or chopped kale
  • 1 cup fresh basil
  • ¼ cup grated parmesan
  • 1 Tbl. Parsley, fresh or dried
  • 2 cloves garlic
  • ½ tsp. lime juice
  • 6 unsalted almonds, about 1 teaspoon
  • ¼ cup olive oil
  • ¼ tsp. salt
  • 1 pinch freshly ground black pepper

Instructions

  • In a small food processor or blender, add in all of the ingredients.
  • Blend until well incorporated and smooth. If needed, add in 1 tablespoon of olive oil at a time to loosen the mixture until smooth.
