Cut the potato lengthwise into 1/2-inch thick slices; then cut each slice into 1/2-inch thick slices.
Preheat oven to 425℉ and cover a baking sheet with foil.
In a bowl, toss the sliced potatoes, olive oil, garlic, rosemary, oregano, cumin, paprika, and Parmesan cheese together until potato are evenly coated. Season with salt and pepper.
Spread the season potatoes in an even layer onto the baking sheet.
Bake for 25-30 minutes or until crispy and golden brown, flipping them halfway through.
Remove from the oven and let cool for 15 minutes. Garnish with more Parmesan cheese and the parsley.
Serve immediately.
