Ingredients

  • 8 oz. pasta of your choice
  • 4 Tbl. unsalted butter
  • 2 cups frozen broccoli florets
  • 8 oz. shredded rotisserie chicken or raw jumbo shrimp
  • 3/4-1 cup grated parmesan cheese
  • 1/4 cup heavy cream (optional)
  • 1 small pinch ground nutmeg (Optional)

Instructions

  • In a large pot, cook the pasta according to the directions. Reserve 1 cup of pasta water and drain the rest. Set the cooked pasta to the side.
  • In the same pot over medium-heat, melt 1 tablespoon of the butter.
  • Add in the broccoli and cook for 2 minutes.
  • Stir in the chicken or raw shrimp (whichever you prefer). Cook for 1 more minute.
  • Add the pasta back into the pot, followed by the rest of the butter. Then stir in 3/4 cup of the parmesan cheese and 1/4 of the reserved pasta water. Toss to coat.
  • Reduce the heat to medium-low and continue to cook for 5 minutes, continuously stirring. Add in more water until the sauce becomes creamy and the cheese melts. You can also add in the heavy cream and pinch of nutmeg if using.
