Chipotle Lime Salmon Bites

Ingredients

For the Salmon:

  • 8-12 oz. boneless salmon filet, cut into 1-inch pieces
  • 2 Tbl. Olive oil
  • ½ lime, juiced
  • ½ tsp. cumin
  • ½ tsp. chipotle powder
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • Salt + pepper, to taste

Honey Lime Sauce:

  • 2 Tbl. fresh lime juice (about 1-2 limes)
  • 2 tsp. honey
  • ¼ tsp. cumin
  • ½ tsp. garlic powder
  • ¼ tsp. chili powder
  • ½ tsp. sweet paprika

Instructions

For the Salmon:

  • Place the salmon piece in a bowl and lightly season with salt and pepper.
  • In another small bowl, combine the olive oil, lime juice, cumin, chipotle powder, garlic powder, and onion powder. Stir until combined and pour over the salmon.
  • Carefully toss until each piece of fish is evenly coated and set aside. Let rest for 30 minutes.
  • Preheat your air fryer or oven to 425℉ and line a baking sheet with parchment paper.
  • After the salmon is done marinating, transfer the pieces to the baking sheet, keeping them an inch apart.
  • Bake or air fry for 15 minutes.
  • Let cool for 5 minutes.

For the Sauce:

  • In a small sauce pan over medium-low heat, add in the lime juice, honey, cumin, garlic powder, chili powder, and paprika. Stir together and continue to cook for 3-5 minutes, just until it get hot enough for the honey to melt and ingredients are well incorporated.
  • Remove from heat and evenly pour the sauce over the salmon bites.
  • Serve with your choice of sides!

Notes

To store, place in an airtight container and refrigerate for up to 4 days. It can also be marinated in advance, about 1-2 days before cooking. 
To Freeze, mix the marinate with the pieces of raw salmon in a freezer-friendly bag. Lay flat in the freezer and freeze for up to 3 months. When ready to eat, remove from the freezer and allow to thaw overnight in the fridge or a few hours on the countertop. Then cook as instructed.
