Burger Bacon Jam

Ingredients

  • 2 slices bacon, sliced into small strips
  • 8 oz. fresh roma tomatoes, core removed and diced (You could also use heirloom, slicer, or cherry tomatoes)
  • ½ small yellow onion, diced finely (about 3/4-1 cup)
  • 2-3 cloves garlic, minced
  • 1 Tbl. tomato paste
  • 1 tsp. brown sugar
  • 1 tsp. alepo or chili powder
  • 1 tsp. oregano
  • 1 tsp. cumin
  • ¼ tsp. salt
  • tsp. white pepper (Or black pepper)
  • 1 tsp. lemon juice

Instructions

  • In a medium pot over medium-low heat, cook bacon until lightly brown and crispy, about 5 minutes. Remove from heat and set aside, leaving any drippings in the pot.
  • Add the garlic and onion. Cook for 5 minutes or until the onion is translucent.
  • Add the tomatoes, tomato paste, aleppo pepper, oregano, cumin, salt, and white pepper.
  • Stir in the bacon and lemon juice. Mix ingredients together until well combined.
  • Reduce heat to low and cover. Cook for 1 hour, stirring every 15 minutes or so. The mixture will thicken into a jam.
  • Remove from heat and allow to cool for 10 minutes before serving as a condiment.
