In a medium pot over medium-low heat, cook bacon until lightly brown and crispy, about 5 minutes. Remove from heat and set aside, leaving any drippings in the pot.
Add the garlic and onion. Cook for 5 minutes or until the onion is translucent.
Add the tomatoes, tomato paste, aleppo pepper, oregano, cumin, salt, and white pepper.
Stir in the bacon and lemon juice. Mix ingredients together until well combined.
Reduce heat to low and cover. Cook for 1 hour, stirring every 15 minutes or so. The mixture will thicken into a jam.
Remove from heat and allow to cool for 10 minutes before serving as a condiment.
