Summer is coming and I am trying to stay away from the oven as much as possible now to prepare myself. During these upcoming hot days, we need to stay cool! And This Strawberry Caprese with Pesto will definitely help keep us refreshed!
I didn’t eat caprese salad a lot growing up. Mainly because I didn’t understand that sliced ingredients could also be a salad. Now whenever I see it on the menu at a restaurant, I would order it.
I love the crunch of the tomatoes, the milky mozzarella and the herby basil. It’s such a simple combination but tastes so amazing.
When my husband and I went to Rome for our honeymoon, I would always get the Caprese salad for our appetizers. The silkiness and creaminess of the buffalo mozzarella was so incredible and was delicious with everything! Instantly fell in love with buffalo mozzarella. Nothing like I had back home. I can’t explain the food there but pure wow. I will miss it immensely but now, it will be my and my husband’s job to keep those memories alive in the household. However, if anyone knows where I can buy buffalo mozzarella in California, please share your secret with me!
Their caprese salads were amazing but a few days before coming back home, we both got home sick and I began to crave food strawberries from our local farms. So I decided to combine the two together and I cannot be any happier.

1 cup pesto, I have a recipe above (I prefer kale pesto)
Salt + pepper to taste
Instructions
In a mixing bowl, toss together the tomatoes, mozzarella balls, and strawberries. Pour the pesto over and carefully mix until evenly coated. Season with salt + pepper if needed.
