Strawberry Pesto Salad

Summer is coming and I am trying to stay away from the oven as much as possible to prepare myself. During these upcoming hot days, we need to stay cool, and this Strawberry Caprese Pesto Salad will definitely help keeping the family refreshed.

I didn’t eat caprese salad a lot growing up. Mainly because I didn’t understand that sliced ingredients could be turned into a salad. Now whenever I see it on the menu at a restaurant, I order it.

Strawberry Pesto Salad

I love the crunch of the tomatoes, the milky mozzarella and the herby basil. It’s such a simple combination but tastes so amazing.

When my husband and I went to Rome for our honeymoon, I would always get the Caprese salad for an appetizer. The silkiness and creaminess of the buffalo mozzarella was so incredible and delicious in everything. In those moments, I instantly fell in love with buffalo mozzarella. Nothing like what I had back home. I can’t explain the food there except for pure wow. I miss it immensely, but it’s my and my husband’s job to keep those memories alive in the household. However, if anyone knows where I can buy buffalo mozzarella in California, please share your secret with me!

Strawberry Pesto Salad

Italy’s caprese salads were amazing, but a few days before coming back home, we both became home sick. I also began to crave food strawberries from our local farms. Which is why I decided to combine the two ingredients together. I couldn’t be any happier with the results. Strawberry Caprese Pesto Salad

Total Time 15 minutes
Course Salad

Ingredients
  

  • 2 cups grape tomatoes, cut lengthwise
  • 1 (16 oz. ) package fresh mozzarella balls
  • 1 cup fresh strawberries, quartered
  • 2 tsp. Balsamic vinegar
  • 1 cup pesto (I have a recipe above if wanting to make homemade)
  • Salt + pepper to taste

Instructions
 

  • In a mixing bowl, toss together the tomatoes, mozzarella balls, and strawberries. Pour the pesto over and carefully mix until evenly coated. Season with salt + pepper if needed.
  • Drizzle with balsamic vinegar.

Notes

To Store: Seal in an air tight container and store in the fridge for up to 3 days.
