One Pot Shrimp Scampi

Needing a simple and quick dinner idea? This One pot Shrimp Scampi has pasta covered with butter and garlic. It’s is easy to make and can be made in under 30 minutes!

Do you want to hear something crazy? When I was younger, I wasn’t familiar with pasta dishes. I wasn’t a fan of them then and I would always mix up shrimp scampi for pasta alfredo. I know. Crazy! But I have come a long way since then and understand now. Does anyone relate?

One-Pot Shrimp Scampi

When I have extra shrimp and no plans to make for the evening, I also have this dish in mind.

One-Pot Shrimp Scampi

It’s such a simple idea too. Pasta coated in a butter and olive oil base and absorbing butt loads of garlic. So simple yet delicious. And it doesn’t even have to be shrimp. Why not try it with chicken or crab meat?

One Pot Shrimp Scampi

Ingredients
  

  • 8 oz. linguine pasta
  • 3 Tbl. butter
  • 2 Tbl. olive oil
  • 3-4 cloves garlic, minced
  • 1 lb. jumbo shrimp, peeled and deveined
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 lemon, juiced
  • 2 Tbl. parsley
  • ½ tsp. red pepper flakes
  • ½ cup parmesan cheese (optional)

Instructions
 

  • In a pot over medium heat, bring water to a boil. Cook the pasta until according to the directions. Drain in colander, reserving ½ cup of water, and set aside.
  • Reduce the pot to medium-low heat. In the same pot, add the butter and olive oil. Once the butter is melted, add in the minced garlic. Continue to stir, making sure it doesn’t burn, for about 2-3 minutes until golden brown.
  • Add in the shrimp, salt, and pepper. Continue to cook until the shrimp turns pink, about 5 minutes.
  • Remove the pan from the heat and add in the lemon juice, parsley, and red pepper flakes.
  • Add in the pasta and toss to coat. Sprinkle with cheese.
  • Serve with your choice of side.
