One Pot Sausage Gnocchi Soup

What’s so great about this Sausage Gnocchi Soup is how forgiving it can be. The kale can be switched out for Spinach. The sweet Italian sausage can be substituted for mild. And the heavy cream can be opted out completely if you want a lighter dish. This soup can be made in 30 minutes, or if you want to prepare it earlier, it can simmer for 2-3 hours. The meat will become more tender and the gnocchi will be pillowy soft the longer it cooks. Both methods are delicious and will have the family go back for seconds.

One Pot Gnocchi Soup

One Pot Sausage Gnocchi Soup

Ingredients
  

  • 1 Tbl. Olive oil
  • 1 lb. Sweet Italian Sausage
  • 1 large carrot, peeled and thinly sliced diagonally
  • 1 small yellow onion, diced (about 1 cup)
  • 1 lb. packaged or frozen gnocchi (plain or a cheese blend)
  • 3-4 cups kale, chopped
  • 4-5 cloves garlic, minced
  • 4 cups chicken stock
  • 1/4 cup heavy cream
  • Salt + Pepper to taste

Instructions
 

  • In a large pot over medium heat, add in oil.
  • Add in sausage and crumble with a spoon. Cook until no longer pink, about 3-5 minutes.
  • Transfer the crumbled meat to a bowl and set aside, leaving any juices in the pot.
  • Add in the carrot and onion into the pot. Cook for 3-5 minutes, or until the onion is translucent.
  • Add the sausage back into the pot.
  • Stir in the kale and cook for 2-3 minutes, or until wilted.
  • Mix in the garlic, gnocchi, and stock.
  • Bring the pot to a boil, then reduce the heat. Simmer for 15 minutes.
  • After 15 minutes, stir in the heavy cream. Simmer for 5 more minutes or for up to 3 hours.
  • Season with salt and pepper. Serve.
