This one-pot pesto shrimp pasta is so creamy and can be made in under 30 minutes. It only takes a handful of ingredients and even the pickiest eaters finish their servings!
I am a very big pesto fan. Huge! Anything with pesto on it, I will take a plate full. It’s probably due to the fact that basil is my favorite herb. But this is the easiest one-pot pasta recipe I have yet to make! I can’t believe how easy it was and wow is it yum-o!
Pesto in a pasta dish is amazing. It has such a fresh and tangy bite to it that it really brightens a dish. And when a protein gets added in, it brings more texture and flavor.
At first, I wasn’t sure how I was going to make this. Maybe like all my other one-pot recipes. But no. I decided to try this method out first by cooking the pasta in water first then adding to it and I am so glad I did! The dish came out so light and creamy!
As you may know, my husband is not a big shrimp fan. He sometimes tries to avoid it if he can or will only eat a few pieces, but he ate his entire bowl! I couldn’t believe it. This recipe is very easy to make and even quicker to put together.
I really hope you enjoy this! So, try this out and don’t forget to tag me on Instagram or Facebook. I would love to see your creation!
1 lb. shrimp, peeled, deveined, and chopped into quarters
3 cloves garlic, minced
1 Tbl. Olive oil
8 oz. orechiette pasta
¼ cup premade pesto, I also have a recipe here
½ cup heavy cream
2 Tbl. parmesan cheese
Salt + pepper to taste
Instructions
In a large skillet, heat the tablespoon of oil with the minced garlic over medium heat. Continue stirring around to prevent burning. Cook for about a minute until garlic gets a light golden, about 1-2 minutes.
Add in the pasta and 2 cups of water. Cover and cook for 10 minutes or until pasta is al dente.
Uncover and reduce heat to low.
Add in the shrimp, pesto, heavy cream, and parmesan cheese. Lightly season with salt + pepper. Cook until the shrimp is pink, about 5-6 minutes.
