Grinch Cake Bites

These Grinch dessert bites are so sweet and adorable, it could make your heart grow three sizes. They are simple to make and are even more fun to enjoy at Holiday parties.

Christmas is here and there is one person that appears this time of year that many know about. And that is Mr. Grinch. He is a what that is a mean one, whose heart is two sizes too small, and the one who stole christmas.

I love the scene in the 2000 film when the Grinch is at the Holiday Cheermeister and being stuffed with homemade goodies. When I first saw the scene, I was fascinated with the creamy, green fudge he had to taste and I have always wanted to try making my own version.

I don’t see it as fudge though but more of a soft, chewy cake. And what better to make a cake flavored with pistachios to make it green!

These cake bites are soft, chewy and the perfect bite for that sweet tooth! They are so much fun to make and both the kids and adults will love them!

Grinch Cake Bites

Notes

*Tip: Have a cup of hot water nearby to dip your knife to wipe off and help give nice, clean cuts before serving.

Ingredients

• 1 box angel food cake mix
• 1 (3.4 oz) pkg. pistachio pudding mix
• 1 stick butter, melted
• 1/3 cup milk
• 1 tsp. vanilla extract
• 2 eggs
• Heart sprinkles, to decorate

Instructions

1. Preheat the oven to 350*. Line a 9 x 13 inch baking dish with parchment paper.
2. In a mixing bowl, mix together the cake mix, pudding mix, butter, milk, vanilla extract, and eggs until well combined.
3. Pour the mixture into the baking dish into an even layer.
4. Bake in the oven for 25-30 minutes or until center is cooked but still soft.
5. Remove from the oven and let cool for 25-30 minutes. While cooling, carefully place a heart sprinkle 2-3 inches apart from each other.
6. Use a clean, sharp edge knife or cookie cutter of your choice, cut into individual sized shapes of your preference.
