I have a a huge soft spot for classic potato salad. It was one of our primary side dishes at family barbecues and parties. What’s so great about it? It’s a classic that can be made anytime of the year and takes little effort to make. It delicious served with the potatoes slightly warmed after being cooked, but tastes better the next day after absorbing the flavors. This Creamy Lemon Herb Potato Salad is no different, and it’s perfect for the sunny summer days. With freshly squeezed lemon juice and chives, then coated in parmesan cheese, this potato salad will turn skeptics into lovers.

Can Red Potatoes be used instead?

Yes. Most waxy potatoes will do when making potato salad. Yukon, fingerling, and Idaho potatoes are also great options.

Creamy Lemon Herb Potato Salad

Ingredients
  

  • 1-1 1/2 lbs. yellow potatoes (about 10-12 potatoes), quartered
  • 1/2 a large lemon, zested and juiced
  • 1 Tbl. fresh chives (about 6 sprigs)
  • 1/2 tsp. garlic powder
  • 1/4 tsp. dillweed
  • 1 generous pinch of ground mustard powder
  • 1/4 cup mayonnaise
  • 2 Tbl. grated parmesan cheese
  • Salt + pepper, to taste

Instructions
 

  • In a pot of water over medium-heat, boil the potatoes for 15-18 minutes or until tender. Drain and place the cooked potatoes on a paper towel to dry and cool completely. Let rest for 10 minutes.
  • In a large bowl, whisk together the lemon juice, lemon zest, chives, garlic powder, dillweed, mayo, parmesan cheese, and mustard powder. It will be a loose yet slightly thick paste.
  • Carefully add in the potatoes and fold in until each one is well coated in the sauce.
  • Serve immediately or cover and refrigerate until ready to serve.
