Cranberry Walnut Honey Scones

Looking for a quick scone recipe for those busy morning? Then look no further. These delicious cranberry walnut honey scones are currently our go-to breakfast on our rushed mornings. They are also perfect for those cold days with a cup of coffee or hot cocoa to warm the heart and soul.

As it was pouring rain and freezing one day, I began to crave a hot fluffy scone. Not a plain scone, but something with texture. I brainstormed what I had in the cabinet. We have cranberries. We have walnuts. And we have honey. The perfect combo.

When I took them out of the oven, they were so warm and doughy, I couldn’t help but split one with my husband while they were still piping hot. I love a puffy scone but I wasn’t sure how my husband would feel about them. My husband is very straight forward and I really wanted him to give me his most honest opinion. If he isn’t fond of them, then I need to get right back in that kitchen! But to my surprise, he said they were really good!

He loves that they aren’t too sweet. He loves the texture of the cranberries and walnuts. He loves them! When I was packing our lunches for the next day, he got a baggie and filled it with the scones.

Cranberry Walnut Honey Scones

Course breads
Servings 1 dozen

Ingredients
  

  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 2 tsp. sugar
  • 2 tsp. brown sugar
  • 4 Tbl. cold butter, cut into tablespoons
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup walnuts, chopped
  • 2 Tbl. honey
  • 1/4-1/2 cup milk

Instructions
 

  • Preheat oven to 350* and Line a baking sheet with parchment paper.
  • Combine the flour, baking powder, sugar and brown sugar in a large mixing bowl.
  • Add the 8 tablespoon slices of butter and press with a fork or dough blender until it becomes a crumbled mixture.
  • Mix in the cranberries, walnuts, honey, and milk
  • Drop the dough by the spoonful onto the baking sheet.
  • Bake for 15-20 minutes or until lightly golden brown.
  • Serve warm with butter.
