Roasted Garlic

Ingredients

  • 2 Bulbs Garlic (If using already peeled garlic, 2-3 dozen pieces)
  • 1-2 Tbl. Olive oil (You can also use avocado, grapeseed, canola, or vegetable oil)
  • Salt + Pepper

Instructions

  • Preheat oven to 425℉
  • If using garlic bulbs, with a knife, cut a 1/4 inch off the top from the head of the garlic. It should be just enough to expose the individual cloves on the inside.
  • Add the garlic to a piece of foil big enough to wrap around it. Drizzle the oil over the top to cover each piece of garlic.
  • Lightly season with salt and pepper.
  • Gently rub the oil mixture over the top to coat the garlic cloves and crevices. If you are using garlic that is already peeled, you can skip this step.
  • Tightly seal the foil over the garlic.
  • Bake 25-30 minutes or until the garlic is golden brown and easily punctured with a knife. Remove from the oven and let cool for 10 minutes.
  • If using head of garlic, carefully squeeze the bottom of the bulbs to release the roasted garlic from the peel.

Notes

Notes: 
You can store the roasted garlic with the oil in a sealed jar or container for up to 2 weeks in the fridge. 
To freeze: Flash freeze the cloves on a tray for 20 minutes before transferring to a freezer bag. They can be stored in the freezer for up to 6 months.
