Green Chili and Cheddar Biscuits

Ingredients

  • 1 1/2 cups All-purpose flour
  • 1 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 5 Tbl. cold unsalted butter, cut into 5 pieces
  • 1 tsp. garlic powder
  • 1/4 tsp. white pepper
  • 1 Tbl. fresh or dried cilantro
  • 1 cup shredded mexican style cheese or cheddar cheese
  • 1 (4 oz.) can fire-roasted green chilies w/ juice
  • 1/2 cup buttermilk (You can also use whole or skim milk)

Instructions

  • Preheat oven to 375℉. Cover baking sheet with parchment paper.
  • In a large bowl, combine the flour, baking powder, salt, white pepper, and butter slices.
  • Using a pastry blender or a fork, break apart the butter and combine it into the flour mixture until there are small lumps. Do not overmix! There should be tiny chunks of butter throughout the bowl. This helps create a flaky dough.
  • Add in the cilantro, garlic powder, cheese, green chili, and milk. With a spoon or rubber spatula, mix the ingredients until well combined and a dough forms.
  • By the spoonful, drop balls of dough by the size of two to three tablespoons onto the baking sheet and place an inch apart.
  • Bake in the oven for 20-25 minutes or until lightly golden.
  • Let cool for 5-10 minutes before servings.

Notes

Notes: 
If you don't have buttermilk, mix 1/2 cup of your preferred milk with 1 1/2 tsp. vinegar or lemon juice. Let rest for 5-10 minutes before using.
