Preheat oven to 350℉.
Combine the oat flour and baking soda in a mixing bowl. Set aside.
In another bowl, mix together the egg, honey, peanut butter, and pumpkin puree until creamy.
Slowly add in the flour mixture until well combined and formed into a soft dough.
Roll out to 1/4 inch thick with a rolling pin. Using cookie cutters, cut out desired shapes and place onto the prepared baking sheet.
Bake 20-25 minutes or until cooked through. Let cool for 10 minutes.
